Miso Pesto Minestrone

Classic minestrone soup is infused with umami from miso herb pesto. This modern addition is reminiscent of “soupe au pistou” where traditional pesto is stirred into a vegetable soup in the Provence region of France. The short cut pasta is kept separate until serving, to maintain the brothiness of the soup.

What are flexitarian recipes?

My recipes are not exclusively vegetarian or vegan, though many of them are. Here and there I include animal proteins, and often I incorporate dairy and/or eggs. But they are full of veggies (and fruit). This is what’s called eating in a “flexitarian” way. I hope you enjoy making my recipes that fit your way of eating!
