Crunchy Carrot and Arugula Salad with Seeds, Citrus, and Tahini

This crunchy salad comes alive from the combination of ample sized raw carrot pieces, succulent Cara Cara oranges, arugula, seeds, and a tahini dressing, and is sits apart from the rest of the salad crowd with its soft ripened cheese garnish.

What are flexitarian recipes?

My recipes are not exclusively vegetarian or vegan, though many of them are. Here and there I include animal proteins, and often I incorporate dairy and/or eggs. But they are full of veggies (and fruit). This is what’s called eating in a “flexitarian” way. I hope you enjoy making my recipes that fit your way of eating!
