Apple Spice Granola (with Dates and Walnuts)

low-sugar granola base of oats, pumpkin seeds and coconut flakes is toasted with olive oil and comes alive with apple and spice flavors from chewy dried apples, crunchy apple chips, spices, walnuts and dates. Go all in, top it with fresh apple, and eat it straight up with the milk of your choice.

What are flexitarian recipes?

My recipes are not exclusively vegetarian or vegan, though many of them are. Here and there I include animal proteins, and often I incorporate dairy and/or eggs. But they are full of veggies (and fruit). This is what’s called eating in a “flexitarian” way. I hope you enjoy making my recipes that fit your way of eating!
